Ingredients

  1. For the Chicken & Vegetables:
    â–¢ 2 large boneless, skinless chicken breasts, cut into bite-sized pieces
    ▢ 1 ½ cups fresh pineapple chunks (or canned, drained)
    â–¢ 1 red bell pepper, chopped
    â–¢ 1 yellow bell pepper, chopped
    ▢ ½ red onion, sliced
    â–¢ 2 cups broccoli florets
    â–¢ Salt and black pepper, to taste
  2. For the Sauce:
    ▢ ¼ cup teriyaki sauce
    â–¢ 1 tablespoon soy sauce
    â–¢ 1 tablespoon honey
    â–¢ 1 teaspoon garlic powder
    ▢ ½ teaspoon ginger powder
  3. Other Ingredients:
    â–¢ 1 tablespoon olive oil
    â–¢ 2 tablespoons chopped green onions, for garnish
    â–¢ 1 teaspoon sesame seeds, for garnish (optional)

Instructions

Step 1: Prepare the Ingredients

  1. Preheat your oven to 400°F (200°C) or heat your grill to medium heat.
  2. In a mixing bowl, whisk together teriyaki sauce, soy sauce, honey, garlic powder, and ginger powder.
  3. Add the chicken pieces to the sauce and let them marinate for about 10 minutes while preparing the vegetables.

Step 2: Assemble the Foil Packets
4. Tear four large pieces of aluminum foil (about 12×12 inches each).
5. Divide the chicken, pineapple, bell peppers, red onion, and broccoli evenly among the foil sheets.
6. Drizzle each packet with olive oil and pour the remaining teriyaki sauce mixture over the top.
7. Season with salt and black pepper to taste.

Step 3: Seal and Cook
8. Fold the foil over the ingredients, sealing the edges tightly to create packets.
9. For the oven: Place the foil packets on a baking sheet and bake for 20-25 minutes.
10. For the grill: Place packets on the grates and cook over medium heat for 15-20 minutes, flipping halfway through.

Step 4: Garnish and Serve
11. Carefully open the packets, watching out for steam. Sprinkle with green onions and sesame seeds (if using).
