For the Almond Crumble:
- 1/2 cup all-purpose flour
- 1/3 cup rolled oats
- 1/3 cup sliced almonds
- 1/3 cup brown sugar, packed
- 1/4 tsp cinnamon
- 1/4 cup unsalted butter, melted
For the Filling:
- 4 cups fresh strawberries, hulled and sliced
- 1/2 cup granulated sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tsp pure vanilla extract
Instructions
- Prepare the Crust:
- In a large bowl, whisk together the flour, sugar, and salt.
- Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.
- Shape the dough into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
- Roll out the dough on a floured surface to fit a 9-inch pie plate.
- Transfer the dough to the pie plate, trim the edges, and flute as desired.
- Prepare the Filling:
- In a large bowl, combine the sliced strawberries, sugar, cornstarch, lemon juice, and vanilla extract.
- Stir until the strawberries are evenly coated, then let the mixture sit for 10 minutes to release juices.
- Make the Almond Crumble:
- In a separate bowl, mix the flour, oats, sliced almonds, brown sugar, and cinnamon.
- Stir in the melted butter until the mixture becomes crumbly.
- Assemble the Pie:
- Preheat the oven to 375°F (190°C).
- Pour the strawberry filling into the prepared pie crust.
- Sprinkle the almond crumble evenly over the top.
- Bake:
- Place the pie on a baking sheet to catch any drips.
- Bake for 40-45 minutes, or until the crust is golden brown, the filling is bubbling, and the crumble is crisp.
- Allow the pie to cool for at least 1 hour before slicing.
