    • 1/4 tsp cinnamon
    • 1/4 cup unsalted butter, melted

    For the Filling:

    1. 4 cups fresh strawberries, hulled and sliced
    2. 1/2 cup granulated sugar
    3. 2 tbsp cornstarch
    4. 1 tbsp lemon juice
    5. 1 tsp pure vanilla extract

Instructions

  • Prepare the Crust:
    • In a large bowl, whisk together the flour, sugar, and salt.
    • Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
    • Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.
    • Shape the dough into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
    • Roll out the dough on a floured surface to fit a 9-inch pie plate.
    • Transfer the dough to the pie plate, trim the edges, and flute as desired.
  • Prepare the Filling:
    • In a large bowl, combine the sliced strawberries, sugar, cornstarch, lemon juice, and vanilla extract.
    • Stir until the strawberries are evenly coated, then let the mixture sit for 10 minutes to release juices.
  • Make the Almond Crumble:
    • In a separate bowl, mix the flour, oats, sliced almonds, brown sugar, and cinnamon.
    • Stir in the melted butter until the mixture becomes crumbly.
  • Assemble the Pie:
    • Preheat the oven to 375°F (190°C).
    • Pour the strawberry filling into the prepared pie crust.
