Spaghetti Aglio E Olio is a simple yet flavorful Italian pasta dish made with olive oil, garlic, red pepper flakes, and parmesan cheese. It’s perfect for a quick weeknight meal that doesn’t skimp on flavor!

Ingredients

  • 16 ounces spaghetti
  • ½ cup olive oil
  • 8 cloves garlic, minced (about 1 ½ tablespoons)
  • ½ teaspoon red pepper flakes, or to taste
  • Salt and pepper, to taste
  • Shredded parmesan cheese

Instructions

  • Cook the pasta in salted water according to the package directions until al dente. Drain the pasta, reserving ½ cup of the pasta cooking water. Set aside.
  • Heat the olive oil in a large skillet over medium-high heat. Add the garlic and red pepper flakes, cooking and stirring for about 1 minute, until fragrant.
  • Carefully whisk the reserved pasta water into the oil and garlic sauce until well mixed.
  • Add the cooked pasta to the skillet, stirring well, and cook for 3-5 minutes until the pasta has absorbed some of the liquid.
  • Remove from heat, season with salt and pepper, and top with shredded parmesan cheese. Garnish with parsley if desired.

Notes

  • You can adjust the amount of red pepper flakes to your desired spice level.
  • For extra flavor, consider adding freshly chopped parsley on top before serving.
