    • 6 cups vegetable broth
  3. Seasonings & Optional Additions:
    1. 12 cloves garlic, minced
    2. 1 teaspoon dried thyme
    3. 1/2 teaspoon ground turmeric (optional, for added health benefits)
    4. 1/2 teaspoon black pepper
    5. 1 tablespoon lemon juice (optional, for brightness)
    6. Salt, to taste

Instructions

  1. Prepare the Vegetables:
    • Chop the cabbage, onion, carrots, bell peppers, and celery into bite-sized pieces. Mince the garlic.
  2. Sauté Aromatics:
    • Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté for 3–4 minutes until fragrant and softened.
  3. Combine Ingredients:
    • Add the cabbage, carrots, bell peppers, celery, diced tomatoes (with juice), and vegetable broth to the pot. Stir in dried thyme, turmeric (if using), black pepper, and salt to taste.
  4. Simmer the Soup:
    • Bring the mixture to a boil. Reduce the heat to low and simmer uncovered for 30–40 minutes, stirring occasionally, until the vegetables are tender and flavors meld.
  5. Finish and Adjust:
    • Stir in lemon juice for a bright, fresh flavor if desired. Taste and adjust the seasoning as needed with additional salt or pepper.
  6. Serve:
    • Ladle the soup into bowls and serve hot. Pair it with a slice of whole-grain bread or enjoy as is for a light, detoxifying meal!
