Instructions
- Prepare the Vegetables:
- Chop the cabbage, onion, carrots, bell peppers, and celery into bite-sized pieces. Mince the garlic.
- Sauté Aromatics:
- Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté for 3–4 minutes until fragrant and softened.
- Combine Ingredients:
- Add the cabbage, carrots, bell peppers, celery, diced tomatoes (with juice), and vegetable broth to the pot. Stir in dried thyme, turmeric (if using), black pepper, and salt to taste.
- Simmer the Soup:
- Bring the mixture to a boil. Reduce the heat to low and simmer uncovered for 30–40 minutes, stirring occasionally, until the vegetables are tender and flavors meld.
- Finish and Adjust:
- Stir in lemon juice for a bright, fresh flavor if desired. Taste and adjust the seasoning as needed with additional salt or pepper.
- Serve:
