Description

Crispy, golden Potatoes O’Brien made in one skillet! Pan-fried Yukon gold potatoes are cooked with onions, bell peppers, and garlic, seasoned to perfection for a delicious, easy side dish. Perfect for breakfast or as a flavorful addition to any meal


Ingredients

  1. 1 medium Yukon gold potato, peeled and diced into ½-inch pieces

  2. 1 tbsp butter

  3. ½ cup chopped onions (about ½ small onion)

  4. ¾ cup chopped red bell pepper (about ½ small bell pepper)

  5. ¾ cup chopped green bell pepper (about ½ small bell pepper)

  6. 1 clove garlic, minced

  7. ½ tsp Creole seasoning (or salt and black pepper)


Instructions

  • Boil the Potatoes:

    • Bring a pot of water to a boil and add the diced potatoes.

    • Cook for 3 minutes, then drain and set aside.

  • Sauté the Vegetables & Potatoes:

    • Melt butter in a 10-inch skillet over medium heat.

    • Add onions, bell peppers, and garlic to one side of the pan, and potatoes to the other.

    • Sprinkle with Creole seasoning (or your preferred blend).

  • Crisp the Potatoes:

    • Let potatoes cook untouched for 3-4 minutes until golden brown.

    • Stir everything together and cook for a few more minutes until potatoes are crisp.

 

  • Taste & Serve:

    • Adjust seasoning if needed and serve hot!


Notes

  • You can substitute Creole seasoning with a blend of salt, black pepper, paprika, and cayenne for a different flavor profile.

 

  • For extra crispiness, let the potatoes cook untouched for a bit longer in the pan.
