Crispy, golden Potatoes O’Brien made in one skillet! Pan-fried Yukon gold potatoes are cooked with onions, bell peppers, and garlic, seasoned to perfection for a delicious, easy side dish. Perfect for breakfast or as a flavorful addition to any meal
Ingredients
- 
1 medium Yukon gold potato, peeled and diced into ½-inch pieces 
- 
1 tbsp butter 
- 
½ cup chopped onions (about ½ small onion) 
- 
¾ cup chopped red bell pepper (about ½ small bell pepper) 
- 
¾ cup chopped green bell pepper (about ½ small bell pepper) 
- 
1 clove garlic, minced 
- 
½ tsp Creole seasoning (or salt and black pepper) 
Instructions
- 
Boil the Potatoes: - 
Bring a pot of water to a boil and add the diced potatoes. 
- 
Cook for 3 minutes, then drain and set aside. 
 
-

Sauté the Vegetables & Potatoes: - 
Melt butter in a 10-inch skillet over medium heat. 
- 
Add onions, bell peppers, and garlic to one side of the pan, and potatoes to the other. 
- 
Sprinkle with Creole seasoning (or your preferred blend). 
 
-

Crisp the Potatoes: - 
Let potatoes cook untouched for 3-4 minutes until golden brown. 
- 
Stir everything together and cook for a few more minutes until potatoes are crisp. 
 
-

Taste & Serve: - 
Adjust seasoning if needed and serve hot!

Notes
- 
You can substitute Creole seasoning with a blend of salt, black pepper, paprika, and cayenne for a different flavor profile. 
- 
For extra crispiness, let the potatoes cook untouched for a bit longer in the pan.
