  1. For the Crust:
    • 1 & 3/4 cups all-purpose flour
    • 3/4 cup confectioners’ sugar
    • 3/4 cup cold butter, cubed
    • 1/4 cup unsweetened cocoa powder

    For the Filling:

    1. 3 cups pecan halves (toasted)
    2. 1 & 1/2 cups semisweet chocolate chips
    3. 3 large eggs
    4. 3/4 cup light brown sugar
    5. 3/4 cup light corn syrup
    6. 1/4 cup unsalted butter, melted
    7. 1 cup sweetened flaked coconut

Instructions

  • Toast the Pecans: Preheat the oven to 350°F (175°C). Spread the pecans on a baking sheet and bake for 8-10 minutes, stirring halfway through. Let cool.
  • Prepare the Crust: In a medium bowl, combine flour, confectioners’ sugar, and cocoa powder. Cut in the cold butter until the mixture resembles coarse crumbs. Press the mixture evenly into a greased 9”x13” baking pan. Bake for 15 minutes.
  • Add Chocolate Layer: Sprinkle the semisweet chocolate chips over the hot crust. Let them melt slightly, then spread evenly. Cool for 30 minutes.
  • Make the Filling: In a large bowl, whisk the eggs until lightly beaten. Add brown sugar, corn syrup, melted butter, flaked coconut, and toasted pecans. Stir to combine.
  • Bake the Filling: Pour the filling mixture over the cooled crust. Bake for 28-34 minutes or until the filling is set.
  • Cool and Serve: Let the pan cool completely at room temperature. Refrigerate for at least 1 hour for easy slicing. Use the foil overhang to lift the bars from the pan, cut into squares, and serve.
