For the Tomatoes:
- 4 large green tomatoes, sliced
- 1 cup almond flour
- 1 cup grated Parmesan cheese
- 2 tsp garlic powder
- 1 tsp paprika
- 2 large eggs, beaten
- Cooking spray
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, mix the almond flour, Parmesan cheese, garlic powder, and paprika.
- Dip each tomato slice into the beaten eggs, then coat thoroughly with the almond flour mixture.
- Place the coated tomato slices on a baking sheet lined with parchment paper. Lightly spray with cooking spray.
- Bake for 20 minutes, flipping halfway through, until the tomatoes are golden and crispy.
- Serve hot with your favorite spicy ranch dressing. Enjoy!
