These oven-fried green tomatoes are crispy, golden, and perfect for a healthy snack or side dish. Paired with spicy ranch, they’re a flavorful treat that’s light and delicious!

  1. For the Tomatoes:

    1. 4 large green tomatoes, sliced
    2. 1 cup almond flour
    3. 1 cup grated Parmesan cheese
    4. 2 tsp garlic powder
    5. 1 tsp paprika
    6. 2 large eggs, beaten
    7. Cooking spray

Instructions

  • Preheat the oven to 425°F (220°C).
  • In a bowl, mix the almond flour, Parmesan cheese, garlic powder, and paprika.
  • Dip each tomato slice into the beaten eggs, then coat thoroughly with the almond flour mixture.
  • Place the coated tomato slices on a baking sheet lined with parchment paper. Lightly spray with cooking spray.
  • Bake for 20 minutes, flipping halfway through, until the tomatoes are golden and crispy.

 

  • Serve hot with your favorite spicy ranch dressing. Enjoy!

Notes

  • Adjust the amount of garlic powder and paprika to suit your taste.

 

  • For extra crunch, you can double coat the tomatoes by dipping them back into the egg and almond flour mixture before baking.
