Description

A rich and creamy seafood bisque made with shrimp, crab, and Mediterranean-inspired flavors. Perfect for a cozy meal, this hearty bisque is enhanced with olive oil, white wine, and fresh herbs. Serve it with crusty bread for a delicious treat!

Ingredients

Scale
  1. 2 tablespoons olive oil
  2. 1 onion, finely chopped
  3. 2 cloves garlic, minced
  4. 1/2 teaspoon dried oregano
  5. 1/4 teaspoon red pepper flakes
  6. 1/2 cup dry white wine
  7. 4 cups vegetable broth
  8. 1 can (14.5 ounces) crushed tomatoes
  9. 1 pound shrimp, peeled and deveined
  10. 1 pound lump crab meat
  11. 1/2 cup heavy cream
  12. Fresh parsley, for garnish

Instructions

  • Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
  • Add Flavorings: Stir in oregano and red pepper flakes, cooking for an additional minute to release their flavors.
  • Deglaze: Pour in the white wine, scraping the bottom of the pot to release any browned bits.
  • Add Broth and Tomatoes: Add vegetable broth and crushed tomatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  • Add Seafood: Stir in shrimp and crab meat. Simmer for 5-7 minutes, or until the seafood is cooked through.
  • Add Cream: Stir in heavy cream and cook for an additional 2-3 minutes, or until heated through.
  • Season and Serve: Season with salt and pepper to taste. Garnish with fresh parsley and serve hot with crusty bread

Notes

  • Adjust the red pepper flakes to your spice preference.
  • This bisque can be made ahead and stored in the refrigerator for up to 2 days.
  • For extra richness, you can add more heavy cream or use half-and-half.
