Description

These crispy and savory chicken flautas, paired with a flavorful homemade salsa and fideo, are the perfect comforting meal. Stuffed with seasoned chicken and cheese, then fried until golden and crispy, they bring bold and authentic flavors to your table.


Ingredients

  1. For the Chicken Flautas:
    • 2 pounds chicken (seasoned with Uncle Chris seasoning and paprika)
    • Salt and pepper to taste
    • 1 teaspoon minced garlic
    • Shredded cheese of your choice (e.g., cheddar, Monterey Jack)
    • Corn tortillas
    • Oil for frying

    For the Salsa:

    1. 2 Serrano peppers (roasted)
    2. 1 jalapeño (roasted)
    3. 1 onion (roasted)
    4. Fresh cilantro (chopped)
    5. 46 tomatillos (boiled until soft)
    6. 2 Calabaza (boiled until soft)
    7. Chicken bouillon to taste

Instructions

  • Prepare the Chicken: Season the chicken with Uncle Chris seasoning, paprika, salt, pepper, and minced garlic. Boil the chicken until fully cooked. Once done, shred the chicken and mix it with the shredded cheese of your choice.
  • Assemble the Flautas: Roll the shredded chicken and cheese mixture into corn tortillas.
  • Fry the Flautas: Heat oil in a pan over medium heat. Fry the rolled tortillas until brown and crispy on both sides.
  • Prepare the Salsa: Roast the Serrano peppers, jalapeño, and onion. Boil the tomatillos and Calabaza until soft. Combine all roasted ingredients, chopped cilantro, and the boiled tomatillos and Calabaza in a blender. Season with chicken bouillon to taste.
  • Serve: Once the flautas are crispy, serve them with the freshly made salsa.

Notes

  • Adjust the heat of the salsa by varying the amount of Serrano peppers and jalapeños.
  • You can freeze the flautas before frying for later use.
  • Serve with a side of fideo or your favorite Mexican side dishes.
