  • 1 pound (450g) lean ground beef
  • 4 medium russet potatoes, peeled and diced into ½-inch cubes
  • 1 medium onion, finely chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups (480ml) low-sodium beef broth
  • 1½ cups (170g) shredded cheddar cheese
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  • Sauté the Aromatics
    Heat olive oil in a large skillet over medium heat. Add the onion and red bell pepper. Cook for about 3 minutes until softened.
  • Brown the Beef
    Push the veggies aside and add the ground beef. Break it up with a spatula and cook until browned. Mix in garlic, paprika, Italian seasoning, salt, and pepper. Cook for another 5-7 minutes.
  • Add the Potatoes
    Stir in the diced potatoes, coating them with the beef mixture.
