Ingredients

  1. For the Blackened Salmon:

    • 2 salmon fillets
    • 1 tsp paprika
    • ½ tsp garlic powder
    • ½ tsp onion powder
    • ½ tsp cayenne pepper
    • ½ tsp salt
    • ½ tsp black pepper

    For the Filling:

    1. ½ cup baby spinach, chopped
    2. ¼ cup grated parmesan cheese
    3. ¼ cup cream cheese, softened
    4. 1 clove garlic, minced

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, mix together spinach, parmesan, cream cheese, and minced garlic to make the filling.
  3. Slice a pocket into each salmon fillet and stuff with the spinach mixture.
  4. In a separate bowl, mix paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  5. Rub the seasoning mixture over the salmon fillets, coating them evenly.
  6. Heat a skillet over medium-high heat and sear the salmon fillets for 2 minutes per side.
  7. Transfer the skillet to the preheated oven and bake for 10 minutes or until the salmon is fully cooked.

Notes

  • You can use any leafy greens instead of spinach if you prefer.
  • Adjust the seasoning based on your preference for spice (add more cayenne for a spicier dish).
