For the Blackened Salmon:
- 2 salmon fillets
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp cayenne pepper
- ½ tsp salt
- ½ tsp black pepper
For the Filling:
- ½ cup baby spinach, chopped
- ¼ cup grated parmesan cheese
- ¼ cup cream cheese, softened
- 1 clove garlic, minced
Instructions
- Preheat oven to 375°F (190°C).
- In a small bowl, mix together spinach, parmesan, cream cheese, and minced garlic to make the filling.
- Slice a pocket into each salmon fillet and stuff with the spinach mixture.
- In a separate bowl, mix paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
- Rub the seasoning mixture over the salmon fillets, coating them evenly.
- Heat a skillet over medium-high heat and sear the salmon fillets for 2 minutes per side.
- Transfer the skillet to the preheated oven and bake for 10 minutes or until the salmon is fully cooked.
Notes
- You can use any leafy greens instead of spinach if you prefer.
- Adjust the seasoning based on your preference for spice (add more cayenne for a spicier dish).
- Serve with a side of roasted vegetables or a light salad.
