- 1 lb ground turkey (93% lean preferred)
- 1 tsp cumin
- ½ tsp chili powder
- 1 tsp kosher salt
- ¼ tsp black pepper
- Cayenne (optional, to taste)
- Olive oil
- ½ large yellow onion or 1 small, diced
- 10 oz frozen cauliflower rice
- 3 garlic cloves, minced
- 1 can black beans (15 oz), drained and rinsed
- 15 oz enchilada sauce
- 1 cup salsa
- 5–6 small corn tortillas, cut into strips and halved
- 1 cup shredded Mexican blend cheese
- Chopped cilantro for topping
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened.
- Add ground turkey, cumin, chili powder, salt, pepper, and cayenne if using. Cook until turkey is browned.
- Stir in garlic and cook for 1 minute.
- Add cauliflower rice, black beans, enchilada sauce, and salsa. Stir well and simmer for 5 minutes.
- Mix in tortilla strips and top with shredded cheese.
- Cover skillet and cook until cheese melts, about 3–5 minutes.
- Garnish with chopped cilantro and serve.
