- 8 oz block of pepper jack cheese, cut into cubes
- 1/4 cup olive oil
- 1/4 cup white wine vinegar or apple cider vinegar
- 1 tsp dried Italian seasoning
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 1/2 cup sliced salami, cut into bite-sized pieces
- 1/2 cup small pickles, like cornichons or dill pickles, sliced
- Fresh herbs, like parsley or basil, for garnish (optional)
Instructions
- In a bowl, whisk together olive oil, vinegar, Italian seasoning, garlic powder, salt, and pepper.
- Add the cheese cubes to the mixture and toss to coat. Marinate for at least 30 minutes or up to 2 hours in the fridge.
- Arrange marinated cheese cubes on a serving platter.
- Add salami pieces and sliced pickles around the cheese.
- Garnish with fresh herbs if desired.
- Serve on their own or with crackers.

- For a spicier kick, add red pepper flakes to the marinade.
- Use different types of cheese for variety, such as gouda or mozzarella.
