  1. For the Raspberry Sauce
    • 1 cup fresh raspberries
    • 2 tablespoons sugar
    • 1 tablespoon lemon juice

    For the Tiramisu

    1. 1 cup heavy cream
    2. 2 tablespoons powdered sugar
    3. 8 oz mascarpone cheese
    4. 8 oz white chocolate, melted
    5. 1 teaspoon vanilla extract
    6. 1 cup brewed espresso, cooled
    7. 1/4 cup coffee liqueur (optional)
    8. 24 ladyfinger cookies
    9. Fresh raspberries and shaved white chocolate for garnish

Instructions

  • Prepare Raspberry Sauce
    • In a small saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat until the raspberries break down and the mixture thickens (about 5-7 minutes).
    • Remove from heat and let it cool. Strain if desired to remove seeds.
  • Prepare Tiramisu
    • Whip Cream: In a large bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and continue whipping until stiff peaks form.
    • Mix Mascarpone: In another bowl, combine the mascarpone cheese, melted white chocolate, and vanilla extract. Gently fold in the whipped cream until well combined.
    • Combine Coffee: In a shallow dish, combine the brewed espresso and coffee liqueur (if using).
  • Dip Ladyfingers
    • Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy. Layer them in the bottom of a serving dish or individual glasses.
  • Layer Ingredients
    • Spread half of the mascarpone mixture over the ladyfingers. Drizzle half of the raspberry sauce on top.
    • Add another layer of dipped ladyfingers, followed by the remaining mascarpone mixture and the rest of the raspberry sauce.
  • Chill and Serve
    • Chill: Cover and refrigerate the tiramisu for at least 4 hours, or overnight for the best flavor.
    • Garnish: Before serving, garnish with fresh raspberries and shaved white chocolate.

Notes

  • For a more intense raspberry flavor, let the raspberry sauce sit in the fridge for a couple of hours before using.
  • The tiramisu can be made in individual servings or a larger trifle-style dish.
  • If you prefer a non-alcoholic version, simply omit the coffee liqueur.
