This White Bean Gnocchi is a hearty, flavorful twist on the traditional dish. Made with cannellini beans, it’s rich, satisfying, and pairs perfectly with marinara sauce. The gnocchi are soft and light with a golden brown crispy finish. Perfect for a cozy dinner or special occasion!

Ingredients

  1. 1 (15 oz) can cannellini beans, liquid reserved
  2. 2 cloves garlic, minced
  3. 1 ½ cups all-purpose flour, plus extra for coating
  4. ½ teaspoon salt, plus extra for boiling
  5. 1 tablespoon olive oil
  6. 1 ½ cups marinara sauce
  7. Chopped basil for garnish
  8. Parmesan cheese for garnish (optional)

Instructions

  • In a food processor, combine the cannellini beans, 1/4 cup of the reserved bean liquid, and minced garlic. Pulse until smooth.
  • Add the bean mixture to a mixing bowl along with flour and salt. Stir until uniform in color. Knead the dough a few times to bring it together.
  • Divide the dough into 6 roughly equal portions. Roll one portion into a long snake shape on your work surface. Cut into ¾” pieces.
  • Drag each piece of dough along the back of a fork to create the gnocchi shape. Toss the shaped gnocchi with a small amount of flour to prevent sticking.
  • Bring a large pot of water to a boil and generously salt it. Drop the gnocchi into the boiling water. Cook for about 1 minute or until the gnocchi floats to the top. Work in batches if needed.
  • In a large skillet, heat olive oil over medium heat. Add the drained gnocchi and sauté for 2 minutes until golden brown on the outside.
  • Add marinara sauce to the pan and heat through.
  • Serve with fresh basil and optional parmesan cheese. Enjoy your White Bean Gnocchi!

Notes

  • You can work in batches when boiling the gnocchi to prevent them from sticking together.
  • Use any marinara sauce of your choice, or make a homemade sauce for an extra boost of flavor.
  • Garnish with extra basil and parmesan for added flavor.
