A delicious twist on classic burritos! These wet burritos are filled with seasoned ground beef, refried beans, and cheddar cheese, then smothered in enchilada sauce and baked to perfection. Topped with sour cream, tomatoes, and cilantro, they’re sure to satisfy!

Ingredients

  1. 1 pound ground beef
  2. 1 can refried beans
  3. 1 onion, chopped
  4. 2 cloves garlic, minced
  5. 1 packet taco seasoning
  6. 1/2 cup water
  7. 4 large flour tortillas
  8. 1 cup shredded cheddar cheese
  9. 1 cup enchilada sauce
  10. 1 cup sour cream
  11. 1 tomato, diced
  12. 1/4 cup chopped cilantro
  13. Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a skillet over medium heat, cook the ground beef, chopped onion, and minced garlic until the beef is browned. Drain any excess fat.
  • Stir in the refried beans, taco seasoning, and water. Cook the mixture until heated through and well combined.
  • Warm the flour tortillas in the microwave for easier handling.
  • Spoon a portion of the bean and beef mixture onto each tortilla, then sprinkle with shredded cheddar cheese. Roll up the tortillas tightly.
  • Place the rolled burritos in a baking dish. Pour the enchilada sauce over them and sprinkle with additional shredded cheese.
  • Bake the burritos in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
  • Serve the baked burritos with a dollop of sour cream, diced tomatoes, and a sprinkle of chopped cilantro.

Notes

  • If you prefer a spicier dish, consider adding sliced jalapeños to the filling or using spicy enchilada sauce.
  • You can substitute ground turkey or chicken for the beef for a lighter version.
  • Leftovers can be stored in the fridge for up to 3 days and reheated in the microwave or oven.
