Description

A refreshing and vibrant mix of sweet watermelon, savory feta, and a hint of mint, perfect for a hot summer day


Ingredients

  1. 1/4 cup extra-virgin olive oil
  2. 2 tablespoons red wine vinegar
  3. Kosher salt, to taste
  4. 3 cups cubed seedless watermelon
  5. 1 cup chopped cucumber
  6. 1 cup crumbled feta (about 6 oz.)
  7. 1/2 cup coarsely chopped mint, plus more for serving
  8. 1/2 cup thinly sliced red onion
  9. Flaky sea salt (optional, for garnish)

Instructions

  • In a small bowl, whisk together the olive oil, red wine vinegar, and 1/2 teaspoon kosher salt.
  • In a large bowl, combine the cubed watermelon, chopped cucumber, crumbled feta, chopped mint, and thinly sliced red onion.
  • Pour the dressing over the salad and toss gently to coat all the ingredients.
  • Top with additional chopped mint and a sprinkle of flaky sea salt (optional).
  • Serve chilled and enjoy!

Notes

  • This salad is best served fresh, but it can be refrigerated for up to 2 hours before serving. However, be mindful that the watermelon may release some water after being in the fridge.
  • For a creamier version, you can use crumbled goat cheese instead of feta.
