Ingredients

- 1/4 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- Kosher salt, to taste
- 3 cups cubed seedless watermelon
- 1 cup chopped cucumber
- 1 cup crumbled feta (about 6 oz.)
- 1/2 cup coarsely chopped mint, plus more for serving
- 1/2 cup thinly sliced red onion
- Flaky sea salt (optional, for garnish)
Instructions
- In a small bowl, whisk together the olive oil, red wine vinegar, and 1/2 teaspoon kosher salt.
- In a large bowl, combine the cubed watermelon, chopped cucumber, crumbled feta, chopped mint, and thinly sliced red onion.
- Pour the dressing over the salad and toss gently to coat all the ingredients.
- Top with additional chopped mint and a sprinkle of flaky sea salt (optional).
- Serve chilled and enjoy!
Notes
- This salad is best served fresh, but it can be refrigerated for up to 2 hours before serving. However, be mindful that the watermelon may release some water after being in the fridge.
- For a creamier version, you can use crumbled goat cheese instead of feta.
- To make this salad more substantial, add grilled chicken or shrimp for a protein boost.
