1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
Kosher salt, to taste
3 cups cubed seedless watermelon
1 cup chopped cucumber
1 cup crumbled feta (about 6 oz.)
1/2 cup coarsely chopped mint, plus more for serving
1/2 cup thinly sliced red onion
Flaky sea salt (optional, for garnish)
Instructions
In a small bowl, whisk together the olive oil, red wine vinegar, and 1/2 teaspoon kosher salt.
In a large bowl, combine the cubed watermelon, chopped cucumber, crumbled feta, chopped mint, and thinly sliced red onion.
Pour the dressing over the salad and toss gently to coat all the ingredients.
Top with additional chopped mint and a sprinkle of flaky sea salt (optional).
Serve chilled and enjoy!
Notes
This salad is best served fresh, but it can be refrigerated for up to 2 hours before serving. However, be mindful that the watermelon may release some water after being in the fridge.
For a creamier version, you can use crumbled goat cheese instead of feta.
To make this salad more substantial, add grilled chicken or shrimp for a protein boost.
