- 2 eggs
- 3/4 cup sugar

Instructions
- Preheat oven to 350°F and spray a 9×5-inch loaf pan.
- Blend watermelon chunks until smooth (should make 1 cup).
- Mix butter and sugar, then add eggs and watermelon puree.
- Add flour, baking powder, and salt, mix until combined.
- Fold in raisins if using.
- Pour batter into pan and bake for 1 hour.
Notes
- For a more intense watermelon flavor, add a bit more watermelon puree, but be careful not to add too much liquid.
- If you’d like a more colorful bread, add the red food coloring for a more vibrant loaf.
- Raisins are optional but provide a nice texture contrast in the bread.
