Description

Watermelon Bread is a moist and slightly sweet treat that brings the refreshing flavor of watermelon into a loaf, perfect for a summer snack or breakfast.


Ingredients

  • 1 1/2 cup watermelon chunks
  • 1/2 cup (1 stick) butter, softened
  • 2 eggs
  • 3/4 cup sugar
  • 2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup raisins (optional)
  • 1 tsp red food coloring (optional)

Instructions

  1. Preheat oven to 350°F and spray a 9×5-inch loaf pan.
  2. Blend watermelon chunks until smooth (should make 1 cup).
  3. Mix butter and sugar, then add eggs and watermelon puree.
  4. Add flour, baking powder, and salt, mix until combined.
  5. Fold in raisins if using.
  6. Pour batter into pan and bake for 1 hour.

Notes

  • For a more intense watermelon flavor, add a bit more watermelon puree, but be careful not to add too much liquid.
  • If you’d like a more colorful bread, add the red food coloring for a more vibrant loaf.
