  • 2428 corn tortillas
  • 3 ½ cups red enchilada sauce
  • 1 tablespoon El Pato or your favorite Jalapeño sauce
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 ½ cups sweet yellow corn kernels, cooked
  • 2 (15 oz) cans black beans, rinsed and drained
  • 2 cups shredded cheddar cheese and Monterey Jack cheese blend
  • Fresh cilantro, diced for garnish
  • Green onion, thinly sliced for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat a small amount of oil over medium heat. Lightly fry the corn tortillas for about 20-30 seconds on each side, just to soften them. Drain excess oil on paper towels.
  3. In a 9×13-inch baking dish, pour a small amount of enchilada sauce to cover the bottom of the dish.
  4. Layer the bottom of the dish with a layer of tortillas.
  5. Spread half of the black beans, bell peppers, sweet corn, and half of the cheese blend on top of the tortillas.
  6. Drizzle with a little of the Jalapeño sauce and enchilada sauce.
  7. Add another layer of tortillas, followed by the remaining black beans, bell peppers, sweet corn, and cheese.
  8. Pour the remaining enchilada sauce evenly over the top layer of tortillas and sprinkle with the remaining cheese.
  9. Cover with aluminum foil and bake for 20-25 minutes.
  10. Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
  11. Garnish with fresh cilantro and green onion before serving.
  12. Serve hot and enjoy this flavorful vegetarian casserole!

Notes

  • Feel free to adjust the amount of Jalapeño sauce to suit your desired level of spiciness.
  • If you prefer a more crispy texture, you can bake the casserole uncovered for the entire cooking time.
