    7. 1 red bell pepper, diced
    8. ½ yellow onion, diced
    9. 1 tablespoon olive oil
    10. 1 tablespoon minced garlic
    11. 14.5 ounces petite diced tomatoes, drained
    12. 15 ounces tomato sauce
    13. 2 cups instant white rice
    14. Beef broth (salted, follow rice package instructions for ratio)

Instructions

  • Sauté the Vegetables:

    • In a large skillet over medium-high heat, heat the olive oil. Add the diced bell peppers and onion, stirring to coat them in oil. Sauté for about 5 minutes, stirring occasionally.
  • Cook the Ground Beef:
