Sweet and savory come together in this tropical Pineapple Chicken and Rice dish! Tender chicken, juicy pineapple, and a flavorful sauce over fluffy rice make this an irresistible weeknight dinner.

    1. 1 pound boneless, skinless chicken breasts, thinly sliced
    2. 1 tablespoon olive oil
    3. 1/2 onion, chopped
    4. 1 can (15 oz) pineapple chunks, drained
    5. 1/4 cup soy sauce
    6. 1/4 cup honey
    7. 1/4 cup rice vinegar
    8. 1 clove garlic, minced
    9. 1/4 teaspoon red pepper flakes (optional)

For Serving:

    • 2 cups cooked rice

Instructions

  • Cook the Chicken
    Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken and cook until browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  • Sauté the Onion
    Add the chopped onion to the same skillet and cook for 3-4 minutes, or until softened and translucent.
  • Add the Pineapple and Sauce Ingredients
    Stir in the pineapple chunks, soy sauce, honey, rice vinegar, minced garlic, and red pepper flakes (if using). Simmer for 2-3 minutes until the flavors combine.
  • Combine and Serve
    Return the cooked chicken to the skillet and toss it in the sauce until fully coated. Simmer for another 2-3 minutes to let the flavors meld. Serve hot over the cooked rice.

Notes

  • For a spicy kick, increase the amount of red pepper flakes or add a dash of sriracha.
  • Add a handful of chopped bell peppers or snap peas for extra veggies.
