- 1 tablespoon olive oil
- 1/2 onion, chopped
- 1 can (15 oz) pineapple chunks, drained
- 1/4 cup soy sauce
- 1/4 cup honey
- 1/4 cup rice vinegar
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes (optional)

Instructions
- Cook the Chicken
Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken and cook until browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside. - Sauté the Onion
Add the chopped onion to the same skillet and cook for 3-4 minutes, or until softened and translucent. - Add the Pineapple and Sauce Ingredients
Stir in the pineapple chunks, soy sauce, honey, rice vinegar, minced garlic, and red pepper flakes (if using). Simmer for 2-3 minutes until the flavors combine. - Combine and Serve
Return the cooked chicken to the skillet and toss it in the sauce until fully coated. Simmer for another 2-3 minutes to let the flavors meld. Serve hot over the cooked rice.

- For a spicy kick, increase the amount of red pepper flakes or add a dash of sriracha.
