Description

These Mango Bars with Lime Glaze feature a buttery coconut-oat crumble, a luscious mango filling, and a tangy lime glaze — a tropical treat that’s perfect for summer or any time you need a sunshine-inspired dessert.


Ingredients

  • 125g (1 stick) unsalted butter
  • 1/2 cup caster/superfine white sugar (or regular granulated sugar)
  • 1 large egg
  • 1 1/2 cups plain/all-purpose flour
  • 1 cup oats
  • 3/4 cup desiccated or finely shredded coconut (unsweetened)
  • 1/2 tsp baking powder
  • 1/4 tsp cooking salt/kosher salt (or 1/8 tsp table salt)
  • 2 1/2 cups (400g) mango slices (from 2 large mangoes), sliced 5mm/0.2″ thick
  • 1 1/2 tsp cornflour/cornstarch
  • 2 tbsp white sugar
  • 3/4 cup soft icing sugar/powdered sugar
  • 1 tsp lime zest
  • 3 tsp lime juice (plus more as needed)

Instructions

  1. Preheat oven to 350°F (175°C) and grease and line a 9-inch square baking dish.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg and mix well.
  3. Stir in flour, oats, coconut, baking powder, and salt until a crumbly dough forms.
  4. Press half of the dough into the prepared baking dish to form the base. Set the remaining dough aside.
  5. In a saucepan, combine mango slices, cornstarch, and sugar. Cook over medium heat for 5–7 minutes until softened and thickened. Let cool slightly.
  6. Spread the mango filling over the base in the dish. Crumble the reserved dough on top as a topping.
  7. Bake for 25–30 minutes, or until the top is golden and filling is set. Let cool completely in the dish.
  8. In a small bowl, mix icing sugar, lime zest, and lime juice to make the glaze. Adjust consistency as needed.
  9. Drizzle glaze over cooled bars, cut into squares, and serve.

Notes

  • Use ripe mangoes for the best natural sweetness and texture.
  • You can use frozen mango slices — thaw and drain them first.
  • The lime glaze is optional but adds a lovely tangy contrast to the sweet mango and coconut base.
  • Bars keep well in the fridge for up to 5 days or can be frozen.
