Ingredients

Scale
  1. Wet Ingredients:

    • 2 large ripe bananas: Mashed for natural sweetness and moisture.
    • 1/4 cup extra virgin olive oil: Adds richness and keeps the bread tender.
    • 1/4 cup unsweetened applesauce: A healthier fat substitute.
    • 1/4 cup honey or pure maple syrup: Natural sweeteners for a subtle sweetness.
    • 2 large eggs: Or flax eggs for a vegan alternative.
    • 1 tsp pure vanilla extract: Enhances the tropical flavors.

    Dry Ingredients:

    • 1 1/2 cups almond flour: Or spelt flour for a fiber-packed base.
    • 1 tsp baking soda: Helps the bread rise.
    • 1/2 tsp baking powder: Provides additional lift.
    • 1/2 tsp cinnamon: Adds a hint of warm spice.

    Optional Add-ins:

    • 1/2 cup shredded coconut: For a tropical touch.
    • 1/2 cup crushed pineapple: Drained to avoid excess moisture.
    • 1/4 cup chopped nuts: Pecans or walnuts add crunch and flavor.

Instructions

  • Preheat Your Oven: Preheat to 350°F (175°C). Grease a standard loaf pan or line it with parchment paper.
  • Mash and Mix: In a large bowl, mash the bananas until smooth. Add olive oil, applesauce, honey (or syrup), eggs (or flax eggs), and vanilla. Mix until combined.
  • Combine Dry Ingredients: In a separate bowl, whisk almond flour, baking soda, baking powder, and cinnamon.
  • Mix Wet and Dry: Gradually fold dry ingredients into wet ingredients, mixing just until combined. Avoid overmixing.
  • Optional Paradise Touch: Fold in coconut, pineapple, and/or nuts for a tropical boost.
  • Bake: Pour batter into the loaf pan. Bake for 45–55 minutes, or until a toothpick comes out clean.
  • Cool: Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Serve and Enjoy: Slice and savor the tropical vibes!
