This Triple Cream Brie & Hot Honey Toastie brings all the rich flavors of a cheese board into a decadent grilled cheese. With creamy Fromager d’Affinois Bleu cheese, sweet pear, salty prosciutto, and a kick of spicy hot honey, it’s the ultimate indulgent comfort food.

- 500 ml honey
- 2 tablespoons chili flakes
- 1 teaspoon Tabasco sauce
- 2 tablespoons lemon juice
- 2 slices white sourdough
- 50 g Fromager d’Affinois Bleu cheese, cut into thick strips
- ½ pear, finely sliced
- 50 g prosciutto, shaved
- 1 tablespoon hot honey
- 2 tablespoons mayonnaise
- 50 g butter
- 1 tablespoon olive oil
Instructions
- For the hot honey, combine all ingredients in a small pot.
- Heat on medium until the honey begins to bubble and becomes runny in consistency.
- This makes a large batch, so store it in a sterilized jar in your pantry for several months.
- For the toastie, spread 1 tablespoon of mayonnaise onto one slice of sourdough and flip it over.
- Layer with Dijon mustard, followed by the Fromager d’Affinois Bleu cheese, slices of pear, and prosciutto. Drizzle with hot honey.
- Top with the other slice of sourdough and spread the remaining mayonnaise on the top side.
- Heat a cast iron pan over low heat. Add butter and olive oil. Once the butter is foaming, add the toastie and cook for about 10 minutes on each side or until golden and crispy.
Notes
- The hot honey makes a large batch, so store the extra in a sterilized jar for future use.
- Feel free to use any type of sourdough bread for the toastie, depending on your preference.
- You can substitute the prosciutto with other deli meats if you prefer.
- For a spicier version, add more chili flakes or Tabasco sauce to the hot honey.
