  • Melt the dark chocolate: Begin by melting the dark chocolate and set it aside to cool.
  • Whisk egg whites: In a bowl, whisk the egg whites and sugar together until stiff peaks form.
  • Whip heavy cream: In another bowl, whip the heavy cream with vanilla extract until soft peaks form.
  • Combine dark chocolate: Gently fold the cooled dark chocolate into the egg whites, followed by the whipped cream.
  • Repeat with other chocolates: Repeat the process with the milk chocolate and white chocolate, following the same folding technique.
  • Layer the mousse: In a cake mold, start layering the mousses: dark chocolate first, followed by milk, and then white chocolate.
  • Refrigerate: Refrigerate the cake for at least 4 hours, allowing the layers to set before serving.
