Ingredients

Scale
  1. Tea Base:
  • 4 cups water
  • 2 tablespoons Kashmiri/Himalayan green tea (or regular green tea)
  • 2 cups whole milk
  1. Spices & Additives:
  • 1/2 teaspoon baking soda
  • 12 star anise
  • 2 cardamom pods, crushed
  • 1 cinnamon stick
  • 1/4 teaspoon salt
  1. For Serving:
  • Sugar or honey to taste
  • Crushed almonds for garnish (optional)

Instructions

  1. Bring the water to a boil in a saucepan, add the green tea, and boil for about 5 minutes.
  2. Stir in the baking soda. The water will turn deep red. Continue boiling for an additional 2 minutes.
  3. Add star anise, crushed cardamom pods, and cinnamon stick. Boil for another minute.
  4. Reduce heat and simmer for 20-30 minutes, allowing the liquid to reduce by half. This will intensify the flavor and color.
  5. Stir in the salt, then add the milk and bring to a boil while stirring constantly. Watch as the tea turns pink.
  6. Strain into cups, sweeten to taste with sugar or honey, and garnish with optional crushed almonds.
  7. Serve hot and enjoy the warming, spiced flavor!

Notes

  • The tea can be served with a variety of garnishes like crushed almonds or pistachios for added texture.
  • Adjust the amount of sweetener according to your taste preferences.
  • If you prefer a stronger flavor, you can let the tea simmer for a bit longer before adding the milk.
