Description

A creamy, refreshing salad made with thawed peas, cheddar cheese, and colorful veggies, perfect as a side dish or light meal. This Irish Pea Salad pairs wonderfully with grilled chicken, baked ham, or even meatloaf.

Ingredients

Scale
  1. 4 cups frozen peas, thawed

  2. 1 cup diced cheddar cheese

  3. 1/2 cup chopped celery

  4. 1/2 cup chopped red bell pepper

  5. 1/4 cup finely chopped red onion

  6. 1/2 cup mayonnaise

  7. 1/4 cup sour cream

  8. 1 tablespoon apple cider vinegar

  9. 1 tablespoon sugar

  10. Salt and black pepper, to taste

Instructions

  • Combine the ingredients: In a large bowl, combine the thawed peas, diced cheddar cheese, chopped celery, chopped red bell pepper, and finely chopped red onion.

  • Make the dressing: In a small bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, sugar, salt, and black pepper until smooth and well combined.

  • Toss the salad: Pour the dressing over the pea and vegetable mixture, gently tossing to coat all ingredients evenly.

  • Chill the salad: Refrigerate for at least an hour before serving to allow the flavors to meld together.

  • Serve: Give the salad a gentle stir before serving. Enjoy!

Notes

  • For extra flavor, you can add some fresh herbs like parsley or dill.

  • Feel free to swap out the cheddar cheese for another variety, such as gouda or mozzarella.

  • This salad can be made ahead of time and stored in the fridge for up to 2 days.
