Ingredients

  1. 1 tablespoon olive oil
  2. 1 small onion, diced
  3. 2 cloves garlic, minced
  4. 1 jalapeño, seeded and diced
  5. 8 ounces white American cheese, shredded
  6. 4 ounces white cheddar cheese, shredded
  7. 1 cup half-and-half
  8. 1 teaspoon ground cumin
  9. 1/2 teaspoon chili powder
  10. Salt and pepper to taste
  11. Chopped fresh cilantro, for garnish
  12. Sliced jalapeños, for garnish
  13. Tortilla chips, for serving

Instructions

  • Heat olive oil in a saucepan over medium heat. Add diced onion and cook until softened, about 5 minutes.
  • Stir in minced garlic and diced jalapeño, cooking for an additional 2 minutes.
  • Reduce heat to low and add shredded white American cheese, white cheddar cheese, half-and-half, ground cumin, and chili powder. Stir continuously until the cheese is melted and the mixture is smooth.
  • Season with salt and pepper to taste.
  • Transfer the queso dip to a serving bowl and garnish with chopped cilantro and sliced jalapeños.
  • Serve immediately with tortilla chips for dipping.

Notes

  • For an extra kick, add more jalapeños or a pinch of cayenne pepper.
