Ingredients

Scale
    1. 8 ounces cream cheese (softened)
    2. 6 ounces deli corned beef (chopped)
    3. 1 cup Swiss cheese (shredded)
    4. ⅔ cup sauerkraut (drained)
    5. ½ cup sour cream
    6. ¼ cup Thousand Island dressing

For serving:

    1. Rye chips
    2. Sturdy crackers/chips
    3. Veggies like carrots and celery

Instructions

  • Preheat the oven to 400°F (200°C). Coat an 8×8-inch baking pan with cooking spray and set aside.
  • In a large bowl, mix together the cream cheese, sour cream, and Thousand Island dressing until smooth and fully combined.
  • Add the chopped corned beef, drained sauerkraut, and shredded Swiss cheese to the bowl. Mix well until everything is evenly distributed.
  • Spread the mixture evenly into the prepared baking pan.
  • Bake for 25-30 minutes, or until hot and bubbly.
  • Remove from the oven and let it cool slightly before serving with rye chips, crackers, or fresh veggies.

Notes

  • If you prefer a milder flavor, you can reduce the amount of sauerkraut or use a mild Swiss cheese.
  • This dip can be made ahead of time and stored in the fridge before baking.
  • For a different twist, try adding a little bit of horseradish to enhance the flavor.
