This Italian Chicken Parmesan is a classic, crispy, and cheesy dish perfect for an easy weeknight dinner. Juicy chicken breasts are coated in a flavorful breadcrumb crust, topped with marinara sauce, mozzarella, and Parmesan, then baked to perfection. Serve over spaghetti for a comforting and satisfying meal

Ingredients

  1. 1 cup Parmesan cheese, grated (divided)

  2. 2 eggs, whisked

  3. 1 ½ cups bread crumbs

  4. 1 tablespoon Italian seasoning (thyme, oregano, basil, rosemary)

  5. 1 teaspoon garlic powder

  6. ½ teaspoon each salt & pepper

  7. 4 chicken breasts, thinly sliced

  8. 2 tablespoons olive oil

  9. 4 slices mozzarella cheese

  10. 1 ½ cups marinara sauce

  11. ⅓ cup shredded mozzarella cheese

  12. 2 tablespoons fresh basil, chopped

  13. 10 oz spaghetti (to serve with chicken)

Instructions

  1. Prepare Breading Stations:

    • Set up three bowls:
      Bowl 1: ½ cup Parmesan cheese.
      Bowl 2: Whisked eggs.
      Bowl 3: Bread crumbs, Italian seasoning, garlic powder, salt, and pepper.

  2. Bread the Chicken:

    • Coat each chicken breast in Parmesan cheese first.

    • Dip into the egg mixture next.

    • Finally, coat in the bread crumb mixture, pressing lightly to ensure even coverage.

  3. Sear the Chicken:

    • Heat olive oil in a large cast iron skillet over medium-high heat.

    • Brown the chicken for 3 minutes per side (6 minutes total). Work in batches if needed.

  4. Bake the Chicken:

    • Preheat oven to 375°F (190°C).

    • Transfer browned chicken to an oven-safe skillet or baking dish.

    • Layer each chicken breast with mozzarella slices, then pour marinara sauce over the top.

    • Sprinkle with shredded mozzarella and the remaining ½ cup Parmesan.

    • Bake for 30 minutes, or until the sauce is bubbling and the cheese is melted.

  5. Serve:

    • Sprinkle with fresh basil and serve over cooked spaghetti.

  • For extra crunch, you can broil the chicken for 2 minutes at the end to get a crispy top.
