This Fresh Pickled Cucumber Salad is a crisp, tangy, and refreshing dish perfect for warm weather. Made with cucumbers, onions, and a flavorful vinegar-based brine, it’s a great side for BBQs, picnics, or everyday snacking. The longer it sits, the better it gets!
Ingredients
4 medium cucumbers, thinly sliced
1 large onion, thinly sliced
1 cup white vinegar
1 cup water
½ cup sugar
1 tablespoon salt
1 teaspoon mustard seeds
1 teaspoon dill seeds
2 cloves garlic, minced
Instructions
In a large bowl, combine sliced cucumbers and onions.
In a saucepan over medium heat, combine vinegar, water, sugar, salt, mustard seeds, dill seeds, and garlic. Stir until sugar dissolves.
Pour hot brine over cucumber mixture and stir gently.
Let cool to room temperature. Transfer to jars or containers.
Refrigerate for at least 24 hours before serving. Best after a few days of marinating.
Notes
Add chili flakes for a spicy version. Red onions can be used for extra color. Keeps in the fridge for up to 2 months. Serve as a side, on burgers, or in sandwiches.
