  1. 1 tablespoon vegetable oil

  2. 1 small onion, finely diced

  3. 1 cup frozen carrot, pea, and corn medley (defrosted)

  4. 1 garlic clove, minced

  5. 2 tablespoons raisins

  6. 3 cups cooked rice

  7. 4 tablespoons ketchup

  8. 2 tablespoons low-sodium soy sauce

  9. ¾ teaspoon black pepper

  10. 4 sunny-side-up eggs (for garnish)

  11. 4 slices of ham (for garnish)

Instructions

  • Heat the Pan: Heat a large nonstick skillet over medium heat and add vegetable oil.

  • Sauté Onions: Sauté the diced onions until softened, about 7 to 10 minutes.

  • Add Vegetables & Raisins: Add the vegetable medley, minced garlic, and raisins. Cook for about 30 seconds or until fragrant.

  • Add Rice: Stir in the cooked rice, using a spatula to break up any clumps.

  • Season: Mix in the ketchup, soy sauce, and black pepper, stirring until evenly combined.

  • Crisp the Rice: Cook on medium-high heat for 3 to 5 minutes, allowing some rice to crisp up.

 

  • Garnish & Serve: Serve immediately, topped with freshly cooked sunny-side-up eggs and crispy fried ham slices. Enjoy!

Notes

  • For extra flavor, you can add a little more soy sauce or a pinch of salt to taste.
