Ingredients
-
2 1/2 cups flour
-
3/4 tsp baking soda
-
1/2 tsp salt
-
1 cup unsalted butter, softened
-
1/2 cup sugar
-
1/2 cup brown sugar
-
1 large egg
-
Juice of 2 limes
-
1/4 tsp vanilla extract
-
Zest of 2 limes
-
6 oz white chocolate chips
Instructions
-
Preheat oven to 375°F (190°C).
-
In a bowl, whisk together flour, baking soda, and salt. Set aside.
-
In a large mixing bowl, cream butter, sugar, and brown sugar until light and fluffy.
-
Beat in the egg, lime juice, and vanilla extract until smooth.
-
Gradually add the flour mixture and mix until combined.
-
Fold in lime zest and white chocolate chips.
-
Drop rounded spoonfuls onto an ungreased cookie sheet. Do not flatten.
-
Bake for 8-9 minutes, or until edges are golden brown. Do not overbake; cookies should be soft and plump.
-
Cool on the cookie sheet for a few minutes, then transfer to a rack to cool completely.
Notes
-
Ensure not to overbake, as the cookies will continue cooking on the baking sheet after removal from the oven.
-
You can adjust the amount of lime zest based on your preference for citrus flavor intensity.
-
For a variation, substitute the white chocolate chips with dark chocolate chips for a bolder flavor combination.
