This Sweet Bread Strata is a savory breakfast casserole made with soft Hawaiian rolls, melty cheese, crispy bacon, and green onions, all baked in a creamy egg custard. It’s perfect for brunch, holidays, or make-ahead breakfasts.

- 6 Hawaiian bread rolls (such as King’s®)
- ½ cup shredded Swiss cheese, divided
- ½ cup shredded Cheddar cheese, divided
- 3 slices cooked bacon, diced, divided
- 4 green onions, diced, divided
- 3 eggs
- ⅔ cup half-and-half
- ½ cup skim milk
- Salt and ground black pepper, to taste
- 2 tablespoons grated Parmesan cheese
Instructions
- Preheat the oven to 350°F (175°C).
- Tear the Hawaiian bread rolls into small pieces and place in a greased 9×9-inch baking dish.
- In a bowl, whisk together eggs, half-and-half, skim milk, salt, and pepper.
- Pour half of the egg mixture evenly over the bread pieces in the baking dish.
- Sprinkle half of the shredded Swiss and Cheddar cheeses, bacon, and green onions over the top.
- Pour the remaining egg mixture over the bread, pressing down slightly to ensure all pieces are soaked.
- Sprinkle the remaining cheese, bacon, and green onions on top.
- Cover with foil and bake for 30 minutes.
- Remove the foil, sprinkle with Parmesan cheese, and bake uncovered for an additional 15–20 minutes, until golden and set.
- Let cool slightly before serving.
Notes
- You can prepare this dish the night before and refrigerate it; just bring it to room temperature before baking.
- Feel free to swap out the cheeses or add other veggies like bell peppers or mushrooms.
- Great way to use up leftover bread or rolls!
