These Jalapeño Popper Cheesy Chicken Enchiladas combine the creamy, spicy flavor of jalapeño poppers with cheesy chicken enchiladas. The rich, creamy sauce and gooey Monterey Jack cheese take these enchiladas to the next level. Perfect for those who love a little spice and a lot of flavor!

  1. 2 cups cooked, shredded chicken
  2. 1 cup cream cheese, softened
  3. 1 cup shredded cheddar cheese
  4. 1/2 cup diced jalapeños (fresh or pickled)
  5. 1/2 teaspoon garlic powder
  6. 1/2 teaspoon onion powder
  7. 1/2 teaspoon cumin
  8. 1/4 teaspoon salt
  9. 1/4 teaspoon black pepper
  10. 8 small flour tortillas
  11. 1 cup enchilada sauce
  12. 1 cup sour cream
  13. 1/2 cup shredded Monterey Jack cheese
  14. Chopped green onions for garnish

Instructions

  1. Preheat the Oven
    Preheat your oven to 350°F (175°C). Grease a baking dish to prepare for the enchiladas.

  2. Prepare the Filling
    In a mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, diced jalapeños, garlic powder, onion powder, cumin, salt, and black pepper. Mix until well combined.

  3. Fill the Tortillas
    Take a tortilla and spoon a generous amount of the chicken mixture onto the center. Roll the tortilla tightly and place it seam-side down in the greased baking dish. Repeat this process with the remaining tortillas and filling.

  4. Make the Sauce
    In a separate bowl, mix the enchilada sauce and sour cream together until smooth.

  5. Assemble and Bake
    Pour the creamy sauce over the rolled enchiladas, ensuring they are well covered. Sprinkle the shredded Monterey Jack cheese on top.
    Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.

  6. Garnish and Serve
    Remove the enchiladas from the oven and let them cool slightly. Garnish with chopped green onions before serving.

Notes

  • You can adjust the level of spice by using fresh or pickled jalapeños, or even swapping them for mild peppers if you prefer less heat.
  • These enchiladas can be made ahead of time and baked just before serving.
