- 12 oz pasta (fettuccine, penne, or spaghetti)
- 2 tbsp olive oil
- 3 tbsp butter
- 3 cloves garlic, minced
- 8 oz mushrooms (cremini, button, or shiitake), sliced
- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 1/2 cup vegetable or chicken broth
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp fresh parsley, chopped
Instructions
- Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
- In a large pan, heat olive oil and butter over medium heat. Sauté garlic until fragrant.
- Add mushrooms, cook until golden brown and softened.
- Pour in broth and let it reduce slightly. Stir in heavy cream, Parmesan, Italian seasoning, salt, and pepper.
- Simmer for 3 minutes, then add cooked pasta and toss to coat. If needed, add reserved pasta water for a silkier sauce.
- Garnish with fresh parsley and red pepper flakes, then serve hot.
Notes
- Feel free to substitute the mushrooms with your favorite variety or a mix of different mushrooms.
- For a lighter version, you can substitute heavy cream with half-and-half or milk.
- To add more protein, try adding grilled chicken or shrimp to the pasta.
