Description

This cheesy, beefy casserole is the ultimate comfort food! Made with just four ingredients – tater tots, ground beef, Velveeta cheese, and Rotel – it’s the perfect easy dinner for busy nights or a hit at your next potluck. Crispy tater tots, creamy cheese, and seasoned beef come together in a bold, flavorful dish

  1. 1 bag (32 oz) frozen tater tots

  2. 1 lb ground beef

  3. 1 block (16 oz) Velveeta cheese (or any meltable cheese block)

  4. 1 can (10 oz) Rotel (diced tomatoes with green chilies, undrained)


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).

  2. Brown the Beef: In a large skillet over medium heat, cook the ground beef until browned and fully cooked. Drain excess grease.

  3. Melt the Cheese: Cut the Velveeta into cubes and add it to the skillet with the cooked beef. Pour in the can of Rotel (undrained). Stir everything together over low heat until the cheese is melted and the mixture is smooth and creamy.

  4. Assemble the Casserole: Pour the cheesy beef mixture into a 9×13-inch baking dish, spreading it out evenly. Top the mixture with a single layer of frozen tater tots.

  5. Bake: Bake uncovered for 30-35 minutes, or until the tater tots are golden brown and crispy.

  6. Optional – Broil: For extra crispiness, broil for 2-3 minutes at the end. Keep a close eye on it to avoid burning.

  7. Serve & Enjoy: Let it cool for a few minutes before serving. Scoop into bowls or plates and enjoy!


Notes

  • For extra flavor, feel free to add some shredded cheddar cheese or a sprinkle of chili powder to the beef mixture.
