Ingredients
- 8 ounces uncooked spaghetti noodles
- 1 ½ pounds lean ground beef
- 1 tablespoon olive oil
- 1 can (10 oz) fire-roasted Rotel with green chilies
- 2 tablespoons tomato paste
- 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
- 1 cup beef broth
- ½ cup heavy cream (optional for extra creaminess)
- 1 cup shredded cheddar cheese
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- Fresh cilantro or green onions (for garnish)

Cook the Spaghetti:
Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside. -
Cook the Beef:
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess grease if needed. -
