Description

This Taco Spaghetti combines the classic flavors of tacos with hearty spaghetti, topped with melted cheddar cheese and a creamy twist. It’s a family favorite, packed with bold flavors and the perfect dinner for taco lovers

Ingredients

Scale
  1. 8 ounces uncooked spaghetti noodles
  2. 1 ½ pounds lean ground beef
  3. 1 tablespoon olive oil
  4. 1 can (10 oz) fire-roasted Rotel with green chilies
  5. 2 tablespoons tomato paste
  6. 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
  7. 1 cup beef broth
  8. ½ cup heavy cream (optional for extra creaminess)
  9. 1 cup shredded cheddar cheese
  10. ½ teaspoon salt (adjust to taste)
  11. ½ teaspoon black pepper
  12. Fresh cilantro or green onions (for garnish)

Instructions

  • Cook the Spaghetti:
Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside.

  • Cook the Beef:
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess grease if needed.

  • Add Flavor:
Stir in the tomato paste and cook for 1 minute. Add the fire-roasted Rotel, taco seasoning, beef broth, salt, and black pepper. Stir and let simmer for 5-7 minutes to allow the flavors to meld.

  • Make it Creamy (Optional):
Stir in ½ cup heavy cream for a rich, creamy texture.

  • Combine Everything:
Add the cooked spaghetti to the skillet and toss until evenly coated in the sauce. Sprinkle with shredded cheddar cheese and stir until melted.

  • Serve & Garnish:
Serve hot, garnished with fresh cilantro or green onions.

Notes

  • For extra creaminess, feel free to add more heavy cream.
  • You can substitute ground beef with ground turkey or chicken for a leaner option.
  • Customize the toppings with sour cream, salsa, or avocado if desired.
