    • 2 ½ teaspoons baking powder
    • ½ teaspoon salt
    • 2 tablespoons granulated sugar
    • 1 ¼ cups milk
    • 1 large egg
    • 3 tablespoons melted butter
    • 1 teaspoon vanilla extract (optional)

    Instructions:

    1. Prepare the Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and sugar.
    2. Prepare the Wet Ingredients: In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until well combined.
    3. Combine: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; lumps are okay.
    4. Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown and fully cooked through.

Notes
