Ingredients

Scale
  1. 2 chicken breasts, pounded thin
  2. ½ cup (60 g) flour
  3. 1 cup (200 g) mushrooms, sliced
  4. ½ cup (120 ml) Marsala wine
  5. ½ cup (120 ml) chicken broth
  6. 2 cloves garlic, minced
  7. 2 tbsp (30 ml) olive oil
  8. 2 tbsp (30 g) butter
  9. Salt and pepper, to taste

Instructions

  • Prepare the Chicken: Season the chicken breasts with salt and pepper, then dredge in flour, ensuring they are coated evenly.
  • Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 3-4 minutes per side until golden brown. Once cooked, remove the chicken and set it aside.
  • Cook the Mushrooms: In the same skillet, add the butter. Once melted, add the sliced mushrooms and sauté for 5-6 minutes until they become browned and tender. Stir in the minced garlic and cook for an additional minute.
  • Make the Sauce: Pour in the Marsala wine and chicken broth. Scrape the browned bits from the bottom of the skillet and bring the sauce to a simmer. Let it reduce for about 3-4 minutes.
  • Combine: Return the cooked chicken to the skillet, spooning the sauce and mushrooms over the top. Let the chicken cook in the sauce for an additional 5 minutes, allowing the flavors to meld together.
  • Serve: Plate the chicken and spoon a generous amount of the Marsala sauce with mushrooms over the top. Serve with mashed potatoes, pasta, or your favorite side dish.

Notes

  • You can use boneless, skinless chicken thighs for a juicier option instead of chicken breasts.
  • For a more intense flavor, allow the Marsala wine to simmer a little longer to reduce further before adding the chicken back in.
  • This dish pairs wonderfully with mashed potatoes or a bed of pasta to soak up the rich sauce.
  • If you prefer a thicker sauce, you can mix in a small amount of cornstarch dissolved in water.
