A perfect combination of flavors that creates juicy, tender chicken every time! This marinade, with ingredients like soy sauce, honey, and Dijon mustard, elevates the taste to perfection. Whether you bake or grill it, this dish will quickly become a family favorite

Ingredients

Scale
  1. For the Marinade:

    • ¼ cup olive oil
    • ¼ cup low-sodium soy sauce
    • 2 tbsp honey
    • 2 tbsp fresh lemon juice
    • 1 tbsp Dijon mustard
    • 4 cloves garlic, minced
    • 1 tsp paprika
    • 1 tsp dried oregano
    • ½ tsp black pepper
    • ½ tsp salt

    For the Chicken:

    1. 2 lbs chicken thighs or breasts (bone-in or boneless, skin-on or skinless)
    2. Fresh herbs (optional, for garnish — parsley, cilantro, or rosemary)

Instructions

  1. Prepare the Marinade:
In a medium mixing bowl, whisk together the olive oil, soy sauce, honey, lemon juice, Dijon mustard, minced garlic, paprika, dried oregano, black pepper, and salt until well combined.

  2. Marinate the Chicken:
Place the chicken in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish with plastic wrap. Marinate for at least 30 minutes, but preferably 2-4 hours.

  3. Preheat the Oven or Grill:
Preheat the oven to 400°F (200°C), or preheat your grill to medium-high heat.

  4. Cook the Chicken:
    Oven Method:

    • Place the marinated chicken on a baking sheet lined with aluminum foil or parchment paper. Bake for 25-30 minutes (20-25 minutes for boneless chicken) or until the internal temperature reaches 165°F (74°C).
    • For a crispy finish, broil for 2-3 minutes, watching carefully to avoid burning.

    Grill Method:

    • Grill the chicken for 6-8 minutes per side for boneless, or 8-10 minutes for bone-in, until the internal temperature reaches 165°F (74°C).
  5. Rest the Chicken:
Let the chicken rest for 5-10 minutes before slicing. This helps redistribute the juices for optimal flavor.

  6. Serve and Enjoy:
Garnish with fresh herbs (optional) and serve hot with your favorite sides.

Notes

  • Adjust marinating time to 4 hours for a deeper flavor.
  • You can use boneless, skinless chicken breasts for a quicker option, or bone-in for a more flavorful dish.
  • If you want a smoky flavor, consider grilling it.
