  13. 1/4 cup raisins or dried cranberries (optional)

Instructions

  • Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix wet ingredients: In a large bowl, combine maple syrup (or honey), applesauce, and grated carrots. Stir until well combined.
  • Mix dry ingredients: In a separate bowl, whisk together rolled oats, almond flour, coconut flour, cinnamon, nutmeg, ginger, salt, and baking soda.
  • Combine wet and dry: Gradually add the dry mixture to the wet ingredients and mix until just combined. Be careful not to overmix.
  • Add optional ingredients: If desired, fold in the chopped nuts and dried fruit.
  • Shape cookies: Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Use a cookie scoop for even portions.
