Description

Texas Roadhouse Smothered Chicken features perfectly cooked chicken breasts smothered in a savory mushroom and onion sauce, topped with melted Monterey Jack cheese. A flavorful, comforting dish.


Ingredients

  • 2 boneless, skinless chicken breasts
  • ½ cup Italian dressing
  • 1 tablespoon avocado oil (or other neutral, high-heat oil)
  • 1 tablespoon butter
  • 10 oz cremini mushrooms, sliced
  • ½ cup yellow onion, sliced
  • 2 tablespoons water
  • ¼ teaspoon white pepper
  • ¼ teaspoon black pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt
  • 2 oz Monterey Jack cheese, sliced

Instructions

  1. Marinate the chicken breasts in Italian dressing for at least 30 minutes.
  2. Heat avocado oil in a large skillet over medium-high heat. Add the marinated chicken breasts and cook for 6–7 minutes per side, until golden and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, melt the butter and add the sliced mushrooms and onions. Sauté for about 5–7 minutes, until softened.
  4. Add water, white pepper, black pepper, onion powder, garlic powder, and salt to the skillet. Stir to combine and let the sauce simmer for 2–3 minutes.
  5. Return the chicken breasts to the skillet, spooning the mushroom mixture over the top.
  6. Place a slice of Monterey Jack cheese on each chicken breast. Cover and cook for another 2–3 minutes, until the cheese is melted.
  7. Serve the smothered chicken warm and enjoy!

Notes

  • For a richer flavor, use a combination of butter and olive oil to cook the chicken.
