- 2 boneless, skinless chicken breasts
- ½ cup Italian dressing
- 1 tablespoon avocado oil (or other neutral, high-heat oil)
- 1 tablespoon butter
- 10 oz cremini mushrooms, sliced
- ½ cup yellow onion, sliced
- 2 tablespoons water
- ¼ teaspoon white pepper
- ¼ teaspoon black pepper
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ½ teaspoon salt
- 2 oz Monterey Jack cheese, sliced
Instructions
- Marinate the chicken breasts in Italian dressing for at least 30 minutes.
- Heat avocado oil in a large skillet over medium-high heat. Add the marinated chicken breasts and cook for 6–7 minutes per side, until golden and cooked through. Remove from the skillet and set aside.
- In the same skillet, melt the butter and add the sliced mushrooms and onions. Sauté for about 5–7 minutes, until softened.
- Add water, white pepper, black pepper, onion powder, garlic powder, and salt to the skillet. Stir to combine and let the sauce simmer for 2–3 minutes.
- Return the chicken breasts to the skillet, spooning the mushroom mixture over the top.
- Place a slice of Monterey Jack cheese on each chicken breast. Cover and cook for another 2–3 minutes, until the cheese is melted.
- Serve the smothered chicken warm and enjoy!
Notes
- For a richer flavor, use a combination of butter and olive oil to cook the chicken.
- You can substitute the mushrooms with your favorite variety, such as button mushrooms or portobello.
