Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 6 tablespoons unsalted butter
  • 1 cup heavy cream (or half-and-half for lighter richness)
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1 teaspoon paprika (smoked or regular)
  • A pinch of cayenne pepper (optional, for heat)
  • Fresh parsley, chopped (for garnish)
  • Cooked egg noodles, mashed potatoes, or crusty bread (for serving)
  • Lemon wedges (for squeezing over the top)

Instructions

  1. In a bowl, toss the chicken pieces with olive oil, salt, pepper, garlic powder, and onion powder until evenly coated. Set aside.
  2. Heat 1 tablespoon of olive oil in a large cast-iron skillet over medium-high heat.
  3. Add the seasoned chicken and cook for 5–6 minutes, stirring occasionally, until golden brown and nearly cooked through. Remove from skillet and set aside.
  4. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  5. Stir in the heavy cream, Parmesan cheese, thyme, paprika, and cayenne pepper (if using). Let the sauce simmer for 3–4 minutes, stirring until slightly thickened.
  6. Return the cooked chicken to the skillet and simmer for another 2–3 minutes, or until the chicken is fully cooked and coated in the sauce.
  7. Garnish with freshly chopped parsley and a squeeze of lemon juice if desired.
  8. Serve hot over egg noodles, mashed potatoes, or with crusty bread to soak up the sauce.

Notes

  • Use half-and-half instead of cream for a lighter version.
  • Pair with a green veggie like steamed broccoli or green beans for a balanced meal.
  • This dish reheats beautifully—store leftovers in an airtight container for up to 3 days.
