Ingredients
Scale
- Cooking spray
- 1 pound lean ground beef
- ½ cup chopped green onion
- 1 (1 ounce) package taco seasoning mix, divided
- 1 (10.5 ounce) can tomato soup (such as Campbell’s)
- 1 (10.5 ounce) can condensed nacho cheese soup (such as Campbell’s Fiesta Nacho Cheese Soup)
- 1 (10.75 ounce) can milk
- 1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots)
- 1 ½ cups shredded Mexican cheese blend
Instructions
- Preheat the oven to 375°F (190°C). Spray a 9×13-inch baking dish with cooking spray.
- In a large skillet, cook the ground beef over medium heat until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
- Stir in the chopped green onion and ½ of the taco seasoning mix.
- Add the tomato soup, nacho cheese soup, and milk to the skillet, stirring to combine. Simmer for 5–7 minutes, or until the mixture is heated through and slightly thickened.
- Pour the beef mixture into the prepared baking dish, spreading it evenly.
- Top with a layer of frozen Tater Tots, covering the entire surface.
- Sprinkle the shredded Mexican cheese blend evenly over the Tater Tots.
- Sprinkle the remaining taco seasoning mix over the cheese.
- Bake for 30–35 minutes, or until the Tater Tots are golden brown and crispy, and the cheese is melted and bubbly.
- Let the casserole cool for a few minutes before serving. Enjoy!
Notes
- For a spicier version, use hot taco seasoning or add chopped jalapeños.
- This casserole freezes well—just reheat in the oven for best texture.
- Serve with sour cream, salsa, or guacamole on the side for extra flavor.
