Description

Fiesta Tater Tot Casserole is a bold and cheesy Tex-Mex inspired dish combining seasoned ground beef, nacho cheese, and crispy Tater Tots, making it a crowd-pleasing comfort food.

  • ½ cup chopped green onion
  • 1 (1 ounce) package taco seasoning mix, divided
  • 1 (10.5 ounce) can tomato soup (such as Campbell’s)
  • 1 (10.5 ounce) can condensed nacho cheese soup (such as Campbell’s Fiesta Nacho Cheese Soup)
  • 1 (10.75 ounce) can milk
  • 1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots)
  • 1 ½ cups shredded Mexican cheese blend

Instructions

  1. Preheat the oven to 375°F (190°C). Spray a 9×13-inch baking dish with cooking spray.
  2. In a large skillet, cook the ground beef over medium heat until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  3. Stir in the chopped green onion and ½ of the taco seasoning mix.
  4. Add the tomato soup, nacho cheese soup, and milk to the skillet, stirring to combine. Simmer for 5–7 minutes, or until the mixture is heated through and slightly thickened.
  5. Pour the beef mixture into the prepared baking dish, spreading it evenly.
  6. Top with a layer of frozen Tater Tots, covering the entire surface.
  7. Sprinkle the shredded Mexican cheese blend evenly over the Tater Tots.
  8. Sprinkle the remaining taco seasoning mix over the cheese.
  9. Bake for 30–35 minutes, or until the Tater Tots are golden brown and crispy, and the cheese is melted and bubbly.
  10. Let the casserole cool for a few minutes before serving. Enjoy!
