  3. 1 bag (10 oz) cashews

  4. 1 bag (6 oz) dried cranberries

  5. ½ cup honey

  6. 6 tablespoons coconut oil

  7. 1 teaspoon vanilla extract

  8. 1½ teaspoons cinnamon


Instructions

  • Prepare the Coating:
    In a small saucepan, heat the honey and coconut oil over medium heat until melted and combined. Stir in the vanilla extract and cinnamon.

  • Combine the Ingredients:
    In a large mixing bowl, combine the pecans, almonds, cashews, and dried cranberries. Pour the honey mixture over the nuts and cranberries, tossing to coat evenly.

  • Bake the Snack Mix:
    Preheat your oven to 275°F (135°C). Spread the mixture evenly on a large baking sheet lined with parchment paper. Bake for 20-30 minutes, stirring every 10 minutes to ensure even toasting.

    Remove from the oven when the mix is golden and fragrant (20-25 minutes for a softer texture or 30 minutes for extra crunch). Let it cool completely before storing in an airtight container.
