Ingredients
– ½ cup light sodium soy sauce
– ½ cup lemon or lime juice
– ½ cup ketchup
– 3 tbsp dark brown sugar
– 2 tbsp garlic powder
– 1 tsp ground black pepper
– 1–2 tsp salt
– 1 can lime soda or Sprite
– 5 lbs beef sirloin or chicken (cut into 1 to 1½ inch chunks)
Instructions
-
Make Marinade: In a bowl, combine soy sauce, lemon or lime juice, ketchup, dark brown sugar, garlic powder, black pepper, salt, and lime soda (or Sprite). Stir until the sugar dissolves.
-
Marinate Meat: Cut the beef or chicken into chunks, coat with the marinade, and refrigerate for at least 3 hours.
-
Soak Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning.
-
Preheat Grill: Heat the grill to medium heat and lightly oil the grates.
-
Assemble Skewers: Thread the marinated meat onto the skewers, leaving space between each piece for even cooking.
-
Grill: Grill the skewers for 10–12 minutes, turning occasionally and basting with marinade, until the meat is charred and cooked through.
Notes
For an extra burst of flavor, add vegetables like bell peppers, onions, or zucchini to the skewers. Serve with your favorite dipping sauce or a side of rice. You can also brush extra marinade on the skewers during grilling for a more intense flavor.
