- 14 oz (400g) rhubarb, cut into 2-inch pieces
- 1/4 cup (50g) vanilla sugar
- 2 tbsp (30ml) fresh orange juice
- Pinch of flaky sea salt
Instructions
- Preheat oven to 400°F (200°C).
- Trim and cut rhubarb into 2-inch pieces.
- In a bowl, toss rhubarb with orange juice, vanilla sugar, and a pinch of flaky sea salt.
- Spread the rhubarb mixture in a single layer on a baking tray.
- Roast for 15–20 minutes or until rhubarb is tender but still holds its shape.
- Remove from oven and let cool before serving.
- Store leftovers in an airtight container in the refrigerator.
Notes
- Use regular sugar with a dash of vanilla extract if you don’t have vanilla sugar.
- Delicious served warm or chilled over yogurt, oatmeal, or desserts.
